You will need:


1 3/4 cup all purpose flour

2 teaspoons sugar

3/4 teaspoon salt

6 tablespoons cold, unsalted butter (cubed)

1/4 cup shortening

8 tablespoons icewater

Pie Filling

1 cup Pumpkin

1/2 cup sugar

2 eggs

2 tbsp. Flour

½ tsp. Ginger

1 tsp. Cinnamon

mix together thoroughly

pinch salt

2 cups evaporated milk

(Double for 2 pies)


Begin by mixing together your flour, salt and sugar until mixed well. Using a pastry cutter, incorporate the butter into the dry ingredients until bean sized lumps begin to form. Add in your shortening and toss until coated in the flour then use the pastry cutter and incorporate into the mixture until pea sized dough forms. The mixture should form together when squeezed. Next you will add in half of your ice cold water and use a fork as a rake to moisten the dough. Dribble in the remaining water and use the fork again to help moisten the dough. Then you will want to gather the dough into a ball and wrap and place in the refrigerator for 2 hours. (When you are ready to roll out your dough, preheat your oven to 350.) Once chilled, roll out and place in your pie baking dish, pressing the bottom and sides and pinching the edges between your fingers. You will want to bake your crust empty for 15 minutes before adding in your pie mixture.

In the meantime, combine your pumpkin, sugar, eggs, flour, ginger, and cinnamon and mix those ingredients thoroughly. Then add a pinch of salt and the evaporated milk and mix. Pour into your pre-baked pie crust and bake at 350 degrees for 50 minutes or until a toothpick comes out clean.

A Week of Christmas Treats!

Grandma Millie's pumpkin pie. Or as my son would have called it, Gigi's pumpkin pie. Although it is nothing like my favorite rocky road bars she made, this is a close second. I just loved when she baked for the holidays. The kitchen always smelled so good and she was always ready to let me help.
