You will need:

1 cup peanutbutter

1 cup sugar

1 egg

1 teaspoon baking soda

 

Preheat your oven to 350 degrees. Then all you need to do is toss all the ingredients in a medium bowl and blend well with a mixer. Once mixed, roll into 1 inch balls and gentle press down with a fork to make those classic peanut butter cookie marks. Bake in the oven at 350 degrees for 10 minutes. Remove from cookie sheet to a cooling rack to cool.

A Week of Christmas Treats!

This simple and delicious cookie recipe comes from my husbands mother, Sue. More specifically from a neat book full of recipes filled by local moms from the PTA to share with each other. So, I cannot say for sure if it was a contribution of hers, but she taught this to her boys and it has stuck. Nevertheless, I call them Sue's peanut butter cookies and plan to make them with my boys just as she did with hers. Scott, my brother-in-law still uses this recipe today after making it with his mom back when he was in elementary school.
